What Are the Side Effects and Health Risks Associated With Cinnamon?
At high levels coumarin can lead to liver damage in vulnerable individuals. The compound is found in trace amounts in Ceylon cinnamon plants but significantly higher levels in cassia cinnamon.1 kilogram (2.2 pounds) of cassia powder contains 2,100 to 4,400 mg of coumarin, which translates to roughly 6 to 12 mg of coumarin in 1 tsp. Given the liberal use of cassia cinnamon in baked goods it is recommended to have a tolerable daily intake of 0.1 mg of coumarin per kilogram of body weight, the amount in roughly 1 tsp of cassia cinnamon per day. Additionally, those who are on blood thinners should consult with their doctors before using cassia cinnamon due to potential interactions with those medications. The best bet is to steer clear of overindulging in cinnamon and instead enjoy it in moderation by sprinkling it on your favorite dishes and treats.

How to Store the Spice
Cinnamon is harvested from the peels of the inner bark of a Cinnamomum tree. The peels are left out to dry and curl up naturally into quills, also known as cinnamon sticks. The quills can then be ground into powder or processed to make cinnamon oil, cinnamon extract, and other cinnamon products.
Rolled-up pieces of cinnamon bark are great for steeping in a cup of tea, coffee, or hot cider, or throw them into a slow cooker with meat.
Ground cinnamon bark is the most popular form of cinnamon in kitchen cabinets, and is popular to incorporate into breakfast foods and can ground in a coffee grinder.
Oils prepared from the bark, leaves, and root bark of the cinnamon tree is used for their fragrance, flavor, and alleged medicinal properties. Cinnamaldehyde, which gives cinnamon its taste, is the most important chemical compound derived from cinnamon bark oil. Leaf oil comprises high concentrations of eugenol, which is occasionally used as an antiseptic. Root bark oil contains elevated concentrations of camphor.
This is concocted by dousing cinnamon sticks in ethanol alcohol, eliminating the solids, and then using the residual liquid for flavoring.
These are sold in pill and capsule form, and are taken for probable medicinal purposes. "Cinnamon supplements appear to be safe for most people for short-term use, if not taken in large amounts," according to the NCCIH. "Some people may have allergic reactions to cinnamon".
Tips for Selecting and Storing Cinnamon for the Best Quality
Storing quills or powder in a cool, dark place in an airtight container preserves freshness. Shelf life of ground cinnamon is for about six months, while quills will remain fresh for about one year when stored in this manner. Storing cinnamon in the refrigerator can extend its shelf life and when it doesn’t smell sweet, it implies that it has gone stale and should be discarded.
